ABSTRACT

The various crises are having a significant impact on the entire food sector and are changing the attitudes of Europeans as well as policies on the importance of food security and sustainably produced quality and safe food for consumer health. The paper focuses on the consumer's fear of food security for the time of the first wave of COVID-19 and the associated concern for food security in the future and the changes in consumer behaviour. The online survey in Slovenia was conducted in June 2020 using a "snowball" method. The sample included 490 individuals. The results showed that both measured forms of fear (i) fear over food security during the first wave of COVID-19 crisis, and (ii) fear over food security in the future were statistically significant, moderately strong and positively associated with almost all forms of self-perceived behaviour change caused by the COVID-19 crisis. The respondents focused more on buying locally produced and processed food, food stockpiling and decreasing food waste. Only minor changes were expressed with regards to their food purchasing channels, with the elderly, the highly educated and those who classified themselves in a higher social class buying more often directly from farmers. In the future, the results of this research should be compared with other countries and the impact of an individual's economic situation and the impact of promotional campaigns on agricultural products on changing consumer behaviour should also be analysed in more detail.

ABSTRACT

The People's Republic of China has the largest population in the world, making it both one of the most fascinating and rapidly expanding import markets for food and beverages as well as one of the most difficult. The Chinese market is appealing to foreign food producers because of the country's high per capita income and quick urbanization. The Agriculture Chapter addressed fundamental trade barriers and will support a significant increase in the export of food, agricultural, and seafood products from the United States, boosting farm and fishery revenue, stimulating rural economies, and fostering employment growth. Numerous non-tariff barriers to the export of U.S. agricultural and seafood products are discussed, including those relating to rice, dairy, infant formula, horticulture products, animal feed and feed additives, pet food, and agricultural biotechnology products, as well as meat, chicken, and seafood. The U.S. has achieved significant export successes thus far, despite the pandemic. Decrees 248 and 249, which take effect on January 1, 2022, mandate that foreign suppliers of particular food products to China register with the GACC before presenting their goods for customs clearance. Several Global Agricultural Information Network (GAIN) reports on GACC Decrees 248 and 249 have been published by FAS offices in China. For the most recent information on whether their business has to register, whether it can self-register, or if it needs to be recommended for registration by a U.S. competent body, U.S. exporters should examine the GAIN system, which offers points of contact at the GACC. According to Euromonitor, urban Chinese customers who are short on time choose shopping near residential areas, especially in the wake of the COVID-19 outbreak. During the crisis, consumers grew accustomed to shopping in their immediate areas. As a result, many major modern grocery chains have used a multi-format strategy and constructed smaller-format stores. Freshippo, Yonghui, and Carrefour are all opening smaller, more neighborhood-focused stores that place an increased emphasis on fresh foods. Some of these shops also act as e-commerce order warehouses and offer prompt home deliveries. Particularly Yonghui has opened Yonghui Mini Stores quickly as an addition to its hypermarket and major supermarket operations. The food processing sector in China has been expanding steadily in recent years. According to the Chinese Ministry of Industry and Information Technology (MIIT), sales, production, and income in the sector rose in 2020. The total profits of China's largest food processing firms reached 620.66 billion yuan (about US$97 billion) in 2020, an increase of 6.8% over the same period in 2019. According to MIIT, these businesses' profit growth was 3.1% higher than the average for all industrial sectors.

ABSTRACT

Background: The Food Commerce industry has flourished massively during the past decade in South Kolkata in West Bengal, with new outlets opening every now and then, so much so that this region is known as 'Food Street'. Regardless of their scale of operations, each of these outlets had well established themselves, catering to their respective target markets and earning decent amount of revenue over the years. However, this growth suffered a setback owing to the origin of novel Coronavirus SARS-n-CoV-2. The growth rate declined to a great extent over the span of two years, with recent studies showing an overall stunted growth rate. Even though online marketing of these outlets and selling the food through delivery apps have aided the entrepreneurs, the cost to revenue ratio is not at par with that of the times before the pandemic hit. Overall, the pandemic has impacted the eateries in more way than initially imagined. Objectives: (a) To reveal the various problems and scenarios of managing food business during the Covid-19 pandemic in South Kolkata region;(b) To compare the present scenario of the food industry with how things were before prior to the pandemic to understand the nature of change during this time frame;and, (c) To describe the challenges and methods implemented by the food retail business entrepreneurs and managers of the randomly selected establishments to hold a steady business flow during the Covid-19 pandemic. Methodology: The study follows a descriptive research design. Therefore, the research will describe the characteristics of the sample under study. The food outlets of South Kolkata have been chosen as the study location. 100 respondents were selected. The respondents are those who consume food from these outlets such that they represent the wider target market of the 'Food Street'. Both Primary Data and Secondary Data were used. Primary Data was collected through sample survey. Random Sampling technique was used to choose the respondents. The study used quantitative data, therefore, only Quantitative analysis was performed. Results: The Research was able to depict the comparison between the present scenario and the situation prior to the pandemic. The study was able to reveal the challenges and problems that the food outlets had to suffer from. Also, the methods or strategies taken up by the entrepreneurs of these outlets to overcome the pandemic were discovered. 46% of the respondents opted for "Mobile Food Delivery" as their strategy to revive from losses. Conclusion: With COVID-19 having altered - and still in the process of altering - the definition of "normal" across the world, most industries are still scrambling to adjust. The effect on the restaurant industry has been particularly dramatic. With restaurants and pubs closed for sit-down service, many establishments are struggling to keep their heads above water. The food outlets located in South Kolkata shares the same fate and the research is able to highlight this effectively.

ABSTRACT

PurposeThe ongoing pandemic has gravely affected different facets of society and economic trades worldwide. During the outbreak, most manufacturing and service sectors were closed across the globe except for essential commodities such as food and medicines. Consequently, recent literature has focused on studying supply chain resilience and sustainability in different pandemic contexts. This study aims to add to the existing literature by exploring the economic, environmental and societal aspects affecting the food supply chain and assessing the impact of COVID-19 on food sustainability.Design/methodology/approachA survey method has been adopted with a questionnaire instrument investigating the role of technology, government policies, geopolitics and intermediaries on sustainable organisational management. A five-point Likert scale (i.e. 1 = strongly disagree;5 = strongly agree) is used to evaluate the responses. The findings are based on 131 responses from entry-level workers and senior executives of different food supply chains across Asia and Europe. The data has been analysed to derive insights into the impacts of this pandemic.FindingsThe survey concludes with the significant impact of COVID-19 on the three pillars of sustainability, i.e. economic, social and environmental dimensions. The empirical analysis shows digitalisation and its applications help mitigate the negative effect of COVID-19 on sustainability. In addition, the supportive government policies and intermediatory interventions were helpful in improving sustainability at each level.Research limitations/implicationsThe findings have implications for businesses and policymakers. Companies can learn from the advantages of digitalisation to counter the challenges imposed by the pandemic or similar situations in the future in maintaining the sustainability of their supply chains. Managers can also learn the importance of effective organisational management in driving sustainability. Finally, policymakers can devise policies to support businesses in adopting sustainable practices in their supply chains.Originality/valueThis study adds to the limited literature exploring the impact of COVID-19 on food supply chain sustainability through the triple bottom line lens. To the best of the authors' knowledge, this is also one of the first empirical studies to examine the effect of technology, government and organisational management practices on the sustainability of food supply chains.

ABSTRACT

The paper presents the reaction of the Romanian cereal market to the disruption of trade flows caused by certain shocks, such as the COVID-19 pandemic, which lead to changes with high impact on the functioning of this market, representing an important test for the resilience of the sector. Due to trade liberalization in global markets, including agri-food markets, the competitiveness of exports has become increasingly important, contributing to the creation of the country's competitive advantage. Any restrictions to trade in agri-food products can distort trade flows, and this disruption will have an impact on supply and prices. Maintaining a balance between imports and exports is essential to ensure domestic market stability. International trade in agri-food products plays an important role in global food security. The results show that Romania mainly exports unprocessed agricultural products, with cereals having the largest share in the export structure, cereal supply is dependent on climate change, yet it is one of the products with the lowest volatility. The cereal market shows a more elastic reaction to price responses, even though demand for staple foods is generally inelastic.

ABSTRACT

PurposeThe purpose of this study is to examine the impact of scarcity and the Lifestyles of Health and Sustainability (LOHAS) consumption tendency on the purchase intention of organic foods. The study used the protection motivation theory and the stimulus-organism-response theory to understand the impact of comparatively new variables like "perceived scarcity” and "perceived consumer effectiveness” (PCE) on the consumer's organic food purchase intentions.Design/methodology/approachThe study is using structural equation modeling with 402 organic food consumers. The participants are regular consumers who bought organic food from specialized shops and supermarkets in the previous few months. The data has been collected at organic food specialized shops and supermarkets that sell organic foods.FindingsThe results showed that LOHAS consumption tendency (LCT), scarcity and PCE positively affect attitude. Similarly, LCT and PCE direct affect trust. Scarcity and PCE directly positive impact on purchase intention of organic food products. Interestingly, LCT had no direct impact on the purchase intention of the product. Trust and attitude were found to be significant mediators impacting purchase intention.Originality/valueThe study contributes to the past theoretical literature on LOHAS consumption by analyzing new constructs like scarcity and PCE in the context of organic food consumption. These findings will be crucial for marketers planning to launch organic products in new markets.

ABSTRACT

The US military, intelligence, and diplomatic communities have overlooked a key vulnerability in their assessment of a potential military conflict between China and Taiwan- Taiwan's growing reliance on agricultural imports and its food stocks (except for rice) that could endure trade disruptions for only six months. This article assesses Taiwan's agricultural sector and its ability to feed the country's population if food imports and production are disrupted;identifies the food products that should be prioritized in resupply operations, based on Taiwan's nutritional needs and domestic food production;and outlines the required logistical assets. These findings underscore the urgency for US military planners to develop long-term logistical solutions for this complex strategic issue.

Our world is changing too fast. The distances have been shortened and communication has been increased by the invention and widespread use of the internet. Our habits started to change in many aspects of our lives by the development of digitalization. Especially during the pandemic Covid-19 that has started at the end of 2019, it's observed that mobility of people have been decreased and however, they began to have difficulties in meeting the needs. There has been a great demand for companies that sell over the internet. In particular, the tendencies of people to purchase food items which are their vital need over the internet have increased to a great extent. Looking at the e-commerce market on a sectorial basis during the pandemic, the biggest increase was seen in e-food trade with a growth of approximately 400%. Within that period, it is predicted that our purchasing habits will change rapidly and virtual markets will become much more important in our lives. The delivery of food products to the consumer has always been a big problem. The risk of deterioration of the products in a short time and the physical destruction of the products during their transportation has increased the importance of food logistics. The logistics channels are needed to be developed in order to increase e-food trade. For this reason, contemporary logistics channels have started to be used by integrating developed logistics applications to the traditional logistics channels. It will be much faster and cost-efficient to deliver the products to the consumer with the new logistics channels in the near future. Yield penalty due to transportation will decrease, and since the number of stock brokers is reduced, the consumer will be able to reach the product they demand at a more affordable price from the producer that they have chosen. In the future, physical stores will be replaced by logistics-supported virtual markets. The agriculture and food sector should also start working in order to accommodate quickly to the new trade order.

ABSTRACT

PurposeThis study explores Greek and Swedish consumers' attitude towards organic food consumption in order to demonstrate possible differences that can be identified based on health and ecological consciousness beliefs rather than demographic factors. The examination of an emerging and a more mature market allow the authors to provide more targeted marketing strategies that possibly increase organic food consumption in both countries.Design/methodology/approachThe authors adopt an econometric approach to the analysis of consumer behavior in relation to organic food consumption in Sweden and Greece. More specifically, the authors examine the motivations and postexperiences of organic food consumers of different socioeconomic profiles in these two countries, one in northern and one in southern Europe. The authors apply an ordered logistic regression analysis model to map out the interaction between consumer attitudes and sociodemographic variables.FindingsThe authors results show that consumers in Sweden more frequently purchase organic foods than consumers in Greece. Environmental protection and ethical values increase the odds for Swedish organic food consumers to buy organic food products. Health consciousness and family well-being are perceived as factors that increase the odds for Greek organic food consumers to buy organic foods. Sociodemographic factors do not play a pivotal role for consumer behavior in relation to organic food in both countries.Originality/valueThis study distinguishes between organic food consumers in two countries with different levels of organic food production and export activity, size of organic market, national organic labeling system and legal definition and standards of organic food. Within these differences, the organic food industry could align its marketing efforts better rather focus on simplistic demographics. The current view unfolds the fact that there are limited studies comparing two European markets at different stages of development and the factors that influence organic food consumer behavior.

ABSTRACT

Many researchers have studied purchasing motives at retail hypermarkets and modern retail scales. However, it is still rarely found in micro or nano-scale retail stores though nanostores are much higher, especially in developing countries. Therefore, this study aims to analyze the factors that motivate someone to buy goods at the nanostore. The research was done using the explanatory survey method. The number of samples is 210 respondents. The data were process using confirmatory factor analysis. The research location is in a big city in Indonesia, namely Bandung City. This city is a city of tourism and trade. The results of the study prove that 12 factors determine consumer motives for shopping at nanostores. These 12 factors are grouped into three: product attributes, self-orientation, and service guarantees. Although this study was conducted on consumer nanostores, the study results contribute to marketing theory, where service assurance is an important part of consumers' purchase motives. This study shows the retailers must understand consumers' buying motives and use the results of this study to increase sales turnover. The results of this study, when used by retail entrepreneurs, are predicted to increase customer satisfaction and loyalty. Service guarantees are the main attraction for consumers to shop at nanostores and this is a new thing in the concept of purchasing motives. For the future, it is recommended to continue the study of purchase motives in modern countries. The concept of service guarantee needs to be researched to find out whether service guarantee can increase the loyalty of large, medium, and nanostore retail consumers.

Hierdie artikel ondersoek hoe hulle moet funksioneer, en identifiseer die voorsieningskettingstruktuur / - produksie / - besigheids toestande wat nodig is vir hul ontwikkeling. Ons bestudeer 'n premium voorsieningsketting wat bestaan uit baie klein plase wat piesangs van topgehalte produseer, een integreerfirma en duisende kleinhandelwinkels. Ons gebruik industrie- en besigheidsdata om 'n meervoudige roete-vloei-gebaseerde model te kalibreer van plase tot integreerder tot kleinhandelaars/markte. Ons gebruik dan sensitiwiteitsanalise om die belanghebbendes se besluitgedrag te analiseer, en identifiseer en bespreek drie hoofbesluitkwessies: kontrakboerdery, kapasiteitstrategie en besigheidsrobuustheid. Vir kontrakspesifikasie is kontraktering op prys, eerder as hoeveelheid, bevorderlik om die belange van die belanghebbendes te koördineer. Die resultate, tesame met die vloeimodel en sy berekeningsprosedure, kan deur voorsieningskettingbeplanners gebruik word om nuwe besighede te begin of om kleinhandelaars se premium produkaanbiedinge in mededingende besigheidsomgewings te onderskei.Alternate :Driven by the total cost of ownership, US-China trade and technology competition, and the COVID-19 pandemic, global supply chains are undergoing a major restructuring that will soon transform business and economics all over the world. Recently, supply chains with end-to-end integration for premium agri-food products have emerged as a new business model. This paper examines how they should function, and identifies the supply chain structure/production/business conditions necessary for their development. We study a premium supply chain consisting of many small farms that produce top-quality bananas, one integrator firm, and thousands of retail stores. We use industry and business data to calibrate a multiple-route flow-based model from farms to integrator to retailers/markets. We then use sensitivity analysis to illuminate the stakeholders' decision behaviour, and identify and discuss three main decision issues: contract farming, capacity strategy, and business robustness. For contract specification, contracting on price rather than quantity is conducive to coordinating the interests of the stakeholders. For the capacity strategy, the integrator should source raw products from many small farms rather than fewer large farms. For business robustness, the integrator could still ensure robust profits by regulating its product supply when new competitors arise or demand changes. These results are tested under various scenarios to determine the impact of input parameters or supply chain structure, and are verified with an industry practitioner who has experience with multiple premium agri-food products. The results, along with the flow model and its computation procedure, could be used by supply chain planners to start new businesses or to differentiate retailers' premium product offerings in competitive business environments.

ABSTRACT

PurposeThe study investigates how consumers' food purchasing habits changed during the Covid-19 pandemic in Italy. The research aims to understand if traditional aspects, health consciousness and environmental concerns have influenced and changed the purchases of food products post-pandemic.Design/methodology/approachThe authors developed a theoretical model to understand whether health consciousness, traditional aspects and environmental concerns affect consumers' purchasing intention. The study collects secondary data to analyse state of the art and investigate consumer behaviour in the agri-food system after the pandemic. Thereafter, a survey was conducted via a convenience random sampling procedure. The data (n = 622) were analysed using the formulated research framework and tested through the structural equation modelling procedure.FindingsThe findings reveal that health consciousness and traditional aspects (culinary traditions, ingredients usage from one's territory of origin, products' origin attention) are among the main reasons for purchasing agri-food goods after the pandemic. Instead, environmental concerns negatively affect consumers' purchase intentions.Originality/valueThe study identifies which aspects influenced consumers' purchasing intentions after the Covid-19 pandemic. It also provides insights for food companies and policymakers on the factors to be improved to optimize the agri-food sector following a sustainable perspective and in order to develop effective business strategies.

Population's safety and health is the food trade's key issue. Consumer behavior model and the consumer's food products value perception that determine his choice is transformed. COVID-19 pandemic has affected the change in households' food consumption priorities. The restrictions imposed and the reduction in real incomes of the population led to a change in the diet in households, the impulsive purchases rejection and the strengthening of the trend for savings, which manifested itself in the transition to cheaper food. Irrational eating behavior model of the population leads to a micronutrients shortage. This worsens the health and quality of the population's life. The economic, social and medical consequences of malnutrition are significant and have a negative impact on food security and sustainable State development. According to stated, the study purpose is to research the dynamics and assess the compliance of actual food consumption in Russian households with the recommended standards by the Ministry of Health of Russia and WHO. The study used materials from the Russian Federal State Statistics Service for the 2005-2020 period (data on the basic foodstuffs consumption volume and structure, food's cost, share of food purchase costs in consumer spending, and the nutritional and energy food value consumed), as well as materials from the Ministry of Health of Russia and the World Health Organization (recommended food consumption norms in households). The study of food products to determine the level of creatine in them is an actual task, taking into account the need for this substance for patients with Covid'19 and spinal muscular atrophy. The purpose of our research is to develop a mobile information system for determining the level of creatine in food products. The developed method for determining the level of creatine in food products by the user and the method for determining the level of creatine in food products using a mobile information system provide the user with the opportunity to quickly, conveniently, cheaply and effectively assess the presence and level of creatine in any food products, on the basis of which to build a rational diet from the point vision of body saturation with creatine. The proposed mobile information system for determining the level of creatine in food products provides convenience, low-cost, celerity, miniaturization and automation for measurement of concentration of creatine in any food products. The conclusion obtained from the system regarding the presence and level of creatine in this or that food product is useful and extremely important when preparing the diet of patients, especially patients with Covid'19 and/or spinal muscular atrophy. The proposed approach and mobile information system for determining the level of creatine in food products can be used not only for drawing up the diet of patients, especially patients with Covid'19 and/or spinal muscular atrophy, from the point vision of body saturation with creatine, but also for example, to check the quality of meat products. © 2023 Copyright for this paper by its authors.

ABSTRACT

The aim of this paper is to assess Czech food consumers' behavior when buying organic products during the COVID-19 pandemic, with an emphasis on the place of purchase of organic agriculture and food products—especially those purchases with the shortest logistics value chain, i.e., purchase at farmers' markets, or directly from the producer—and a comparison with the current most common places of purchase of organic products in the Czech Republic, supermarkets and hypermarkets. Categorical data analysis methods were used to create a profile of the consumer according to the most frequent purchase locations. To create mathematical–statistical models and interpretations, the methods of logistic regression, correspondence analysis and contingency table analysis were chosen. According to the results of the survey, respondents under 25 years of age are the least likely to make purchases at farmers' markets or directly from the producer. Consumers aged 26–35 and with a university degree are the most likely to buy organic agriculture and food products at this location, followed closely by older respondents in the categories 36–45 and 46+ and with a secondary education. It is important for manufacturers to have an overview of where, in what quantities, and for what reasons consumers buy their products, especially for reasons of production optimization and planning, ecological concerns, rural development, and the impact on local areas and the value chain.

Increasing body immunity is very necessary after the Covid-19 pandemic. One of the efforts that can be made to increase the body's immunity is to consume functional foods with immunostimulant activity, such as processed snakehead fish products in the form of nuggets, and "parkusel" juice made from a mixture of bitter melon, dates and celery. The purpose of community service is to provide knowledge and skills to housewives and the community at the Veteran ABRI Housing Complex in Medan Estate, Deli Serdang Regency, in making functional food products in the form of snakehead fish nuggets and Perkusel juice. The community service method used is the counseling method with leafet aids and training in making snakehead fish nuggets and perkusel juice. The results of the activity showed that there was an increase in the knowledge of the community participants in community service activities about nutritious snack products that can increase body immunity by 71% in the good value category.

ABSTRACT

The quality of wastewater and the socioeconomic aspects of the life of the population are shown to be interrelated. It is proposed to use municipal wastewater to diagnose the health of the population, to assess the feeding preferences of city dwellers, the use of alcohol, tobacco, medicines, and drugs, to assess the exposure of the population to the effect of hazardous chemicals (PAH, pesticides, preserving agents, plasticizers, etc.), and to timely reveal deceases (including COVID-19). The authors proposed several biomarkers, which are recommended to use to monitor the water-resource system as a component of the urban ecosystem.

ABSTRACT

Purpose: The Russia–Ukraine war has disrupted the wheat supply worldwide. Given that wheat is one of the most important agri-food products in the world, it is necessary to pay attention to the wheat supply chain during the global crises. The use of resilience strategies is one of the solutions to face the supply chain disruptions. In addition, there is a possibility of multiple crises occurring in global societies simultaneously. Design/methodology/approach: In this research, the resilience strategies of backup suppliers (BS) and inventory pre-prepositioning (IP) were discussed in order to cope with the wheat supply chain disruptions. Furthermore, the p-Robust Scenario-based Stochastic Programming (PRSSP) approach was used to optimize the wheat supply chain under conditions of disruptions from two perspectives, feasibility and optimality. Findings: After implementing the problem of a real case in Iran, the results showed that the use of resilience strategy reduced costs by 9.33%. It was also found that if resilience strategies were used, system's flexibility and decision-making power increased. Besides, the results indicated that if resilience strategies were used and another crisis like the COVID-19 pandemic occurred, supply chain costs would increase less than when resilience strategies were not used. Originality/value: In this study, the design of the wheat supply chain was discussed according to the wheat supply disruptions due to the Russia–Ukraine war and its implementation on a real case. In the following, various resilience strategies were used to cope with the wheat supply chain disruptions. Finally, the effect of the COVID-19 pandemic on the wheat supply chain in the conditions of disruptions caused by the Russia–Ukraine war was investigated. © 2023, Emerald Publishing Limited.

ABSTRACT

From 2019 to 2022, since the outbreak of the COVID-19 pandemic, the global percentage of hunger rose by 150 million people, which is 10% of the world population. At the same time, one-third of food is thrown away because it cannot reach the final consumer. Climate change, natural catastrophes, wars leading to humanitarian crises are the main and ongoing causes of hunger. COVID- 19 acted as an accelerator of processes that exacerbate the food security crisis, to which import-dependent countries are especially sensitive. Quarantine that was introduced as a tool to combat the spread of the COVID-19 acted as a catalyst of social, economic, political, ecological, and food crisis that is displayed in the global economic system and in agriculture - its subsystem. At first glance, the increase in the percentage of starving populations on the planet is explained by poverty and the inability to purchase basic food products;a rise in prices was caused by breaks in logistics chains, the increase in the price of energy carriers, and economic shifts caused by the lockdown. In practice, despite the constantly growing volumes of global production of agro-industrial products, the balance between demand and supply of products that ensure the world's food security has been disturbed. The research problem lies in the insufficient determination of intangible causes of hunger, other than those caused by poverty and social inequality. The aim of the research is to show the prospects of the aggravation the food security crisis due to excess of food demand over supply, and to propose theoretical ways out of the crisis. The quantitative method of panel data research was used to prepare the article. The visualization method was used to simplify the perception of the proposed array of information. It is possible to overcome such social problems as hunger, poverty, climate and ecology problems caused by the increase in the temperature on the planet's surface, ocean pollution, and soil degradation only through adaptation and achieving synergy between the planet's ecosystems. Agriculture as a main factor of food security should be transformed through implementing principles of climate-optimized agriculture and blue economy (use of ocean resources) as a source of "blue food" to achieve food sustainability.
